The Culinary Medicine Course: Cooking Up Health (CUH) is an elective for health professional students developed by faculty from the Osher Center for Integrative Medicine at Northwestern University in partnership with the non-profit community organization Common Threads. 

Our CUH course is intended to expand students’ comfort in counseling patients in successful behavior change around nutrition and cooking, as well as develop skills for personal well-being.

LOCATION:  Northwestern Memorial Hospital, Feinberg Pavilion, 251 E. Huron in Chicago, IL

TIME: September 8, 2018, 9 am – 5 pm (tentative)

FACULTY: The training will be led by the CUH authors and instructors, Dr. Melinda Ring (Osher) and Chef Stephanie Folkens (Common Threads).

AGENDA: This workshop will include sessions on:

  • preparing to successfully implement CUH in its full format or abbreviated options,
  • accessing the curriculum and resources,
  • participating in a sample cooking class,
  • experiencing various parts of the lessons, and
  • an opportunity to ask questions and explore the course as a group

The “learning” portion of the course includes a combination of pre-work/videos/didactics and hands on culinary sessions- all focused on plant-based diets. The “giving-back” part of the course engages students in service learning by bringing them into grade school classrooms to administer an established grade school nutrition curriculum to children and/or families in at risk communities. Through this course, participants learn basic culinary skills, steps to create nutritious meals, relationships between food, health, and disease, and cultural competencies around nutrition.

CUH has been offered to Feinberg School of Medicine medical students, with pre- and post- measurements showing significant improvements in multiple areas, including confidence counseling patients about basic nutrition and obesity, and confidence in their own ability to cook and make healthy choices. The CUH curriculum has been presented at multiple international conferences since its inception, with publication in process.

Registration is very limited! 12 participants maximum.
